Mushrooms can be found as part of a Challenge in Tomb Raider (2013) or as a resource in Rise of the Tomb Raider.
Tomb Raider Reboot
Mushrooms can be found in the Summit Forest location of Tomb Raider (2013). They are part of the Red Cap Roundup challenge.
The mushrooms are located in the shady parts of the forest, mostly directly underneath the trees. The have a red cap, hence the title of the challenge.
A total of ten mushrooms have to be collected in order to complete the challenge.

Rise of the Tomb Raider
Mushrooms are a common resource in Rise and can be found by breaking open old tree trunks with the Axe, for example in Siberia.
It can be used for Crafting the following items:
